Day 182 - how it is only Tuesday?

I feel like I've done an entire work week within the last two days. Today was nonstop; meetings, paperwork, customer service, reviews, etc. etc. etc...

I am truly exhausted. And it's only Tuesday, and the next two days are promising to be just as busy and longer than today, which is draining just to even think about.

Also, people are driving like idiots; blocking lanes, not going the speed limit, being generally unpredictable - it is infuriating and after a long day, trying to get home should not be so aggravating. 

I am trying to not be grumpy, so focusing on positives - I attempted a new quick dinner tonight which was successful. 

Mini quesadillas! Small corn tortillas heated on the stove with snack cheddar cheese inside to melt, then topped with salsa. Delish and ready in minutes. 


Lunch was the same as yesterday (and the last of my prepped meals this week). Because of a lunch time meeting, I ate in two parts though. Started with my garden cucumber and then the mixed greens salad with guacamole dressing. Then I had my afternoon apple. Then AFTER my call a few hours later, I was able to heat up my chickpea pasta, garden roasted zucchini, and sweet green peas. And today I remembered to bring the parmesan cheese to top it off.


Sunday me was overly confident that Tuesday me would be able to whip something else up for the next few days... Tuesday me is not having that. I have to run an errand for work tomorrow anyways so at least I'll be out and about to pick up something for myself. Also my boss is tied up at another event so I won't have to worry about impacting her schedule, which is my usual wednesday concern. 

Since I seem to be working my way backwards today, my day started with my chai tea and a Kind protein bar (banana/peanut butter/dark chocolate flavor). 


Now I've got some paperwork to do before bed (and maybe yoga). I was very disappointed last night that I did not have time (or would have had to get less sleep to fit it in). Right now, I need my sleep so much that it is hard to put yoga above bedtime. Hopefully today's items don't run as late as last night. But at this point, as long as I get a lot done - I can't complain. Despite spending so much time on hold on the phone yesterday, I was able to play some solitaire games I had not played in years, renew my favorite magazine subscription, and a few other misc. little things. So I am just focusing on the positives when I can.
